✨BLUEBERRY DATE BARS✨Let’s start right with these delicious bars. Dates are my new favorite ingredient. They are packed with fiber, antioxidants and are a natural sweetener. Next time you think of baking, add dates!

1 cup medjool pitted dates
1/2 cup rolled oats
1/4 tsp salt
1 teaspoon baking powder
1/4 cup maple syrup
2 graham crackers
Pinch of cinnamon
3 eggs
3 tablespoons powdered peanut butter
1 1/2 teaspoon vanilla extract
3/4 cup blueberries

Soak the dates in water for 1 hour. Place the oats in a food processor and pulse until the texture is like instant oatmeal. Add the rest of the ingredients to the food processor, except for the blueberries, and pulse for 30 seconds. Pour batter into a pan sprayed with cooking spray. Sprinkle the blueberries on top and gently press them down. Bake at 350 degrees for 35-40 minutes.
