✨EGGPLANT MINI PIZZA✨ Because summer is right around the corner and we all need something to curb that pizza craving while still trying to get summer ready. These hit JUST THE SPOT. I literally could have eaten the whole sheet pan if I didn’t have to share with my husband 🙃

1 large eggplant (cut into 1/2 inch thick slices)
2 tablespoons olive oil
Pizza sauce from @traderjoes
Low-fat mozzarella cheese
Low sodium salami (cut into small circles)

Line a baking sheet with parchment paper. Place eggplant in a single layer on the baking sheet. Drizzle with the olive oil and sprinkle with salt and pepper. Bake at 450 degrees for 15 minutes. Spread about 2 tablespoons of the pizza sauce on each eggplant. Sprinkle with the mozzarella cheese and salami slices. Bake for another 5 minutes at 500 degrees, until cheese is melted.

One of my favorite dishes that’s light, but filling!
