✨TOFU BREAKFAST SCRAMBLE ✨This delicious meal has it all, protein, fat and carbs, plus it only takes 15 minutes to make. Who doesn’t love a quick and easy meal to start their day?
1 block extra firm tofu (mashed)
1 small onion (diced)
1 garlic glove (minced)
2 tablespoons Olive oil
1 teaspoon paprika
1 teaspoon ginger (powdered or fresh)
2 tablespoons finely diced green onion
2 cups leftover rice (1 day old)
2 tablespoons low sodium soy sauce
1 cup frozen peas
Sesame seeds for garish (optional)
Add 1 tablespoon olive oil into a sauté pan over medium heat. Add diced onion and cook for about 3-4 minutes. Add garlic and cook for another 1-2 minutes. Next, add the mashed tofu, paprika and ginger. I used the back of a fork to mash the tofu. Cook for 2-3 minutes, until spices are incorporated well. Add the rice and last tablespoon of olive oil. Cook for 2-3 minutes. Finally, add the peas, soy sauce and chives. Cook for another 2-3 minutes until veggies are warm. Taste and add additional soy sauce if desired. Garnish with extra green onion and sesame seeds.
