✨ZUCCHINI BREAD✨What do I enjoy more than eating bread? Bread that’s lighter, healthier, and gives me a serving or two of my veggies. Add in a couple of fun spices and this bread is to die for.

1/3 extra-virgin olive oil
1/4 cup honey
1/4 maple syrup
2 eggs
1/2 cup @silk vanilla almond milk
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 teaspoons vanilla extract
1/2 teaspoon fine-grain sea salt
1/2 teaspoon ground nutmeg
1/3 cup vanilla @fage Greek yogurt
1 ½ cups grated zucchini—squeeze out excess moisture before adding to batter
1 ¾ cups whole wheat flour

Grate zucchini and squeeze out excess water. Set aside. Add the rest of the ingredients into a bowl and stir well. Add zucchini. Bake at 325 degrees for 50-55 minutes.

This bread really is delicious and fits into summer with its light and simple flavors ☀️
